Italian Sausage Lasagna with Goat Cheese

Ingredients
1 package Cappello’s lasagna sheets (or favorite)
1 lb spicy Italian chicken or pork sausage
2 cups, shredded mozzarella
½ cup parmesan cheese
Topping: crumbled goat cheese
1 jar Trader Joe’s Harvest Sauce (seasonal)
Instructions
Preheat oven to 375º F
Prepare lasagna noodles according to package directions
Cook chicken or pork, breaking up with a wooden spoon, then drain fat
Add harvest sauce and stir until warmed through
Arrange a single layer of noodles across the bottom of an 8x8 baking dish, followed by a third of the meat sauce
Pour a third of the parmesan and mozzarella over the meat sauce, then repeat the layers, ending with cheese (3 layers total)
Top with goat cheese
Bake uncovered for 40 minutes until set
Set to broil until it starts to bubble and brown
Allow the lasagna to cool for 30 minutes, then serve
